French Toast Mini Bagels

INGREDIENTS:
- 4 Thomas'® Plain Mini Bagels, split
- 4 large eggs
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 1 ½ tablespoons unsalted butter
- Optional: maple syrup
Prep time: 3 minutes Cook time: 2 minutes
DIRECTIONS:
Whisk together eggs, milk and vanilla in a shallow dish until combined well. Soak bagels in mixture, turning occasionally for bagels at least 8 to 10 minutes, until softened but not falling apart.|Heat butter in a 12-inch, heavy, non-stick skillet or griddle over moderately high heat until foam subsides. Transfer soaked bagel slices to skillet cut sides down with tongs and cook until golden brown on both sides, about 2 minutes total. Serve with maple syrup if desired.
