Ham and Cheese Muffin Melts
SERVINGS: Serves 4
INGREDIENTS:
- 4 Thomas'® Whole Wheat English Muffins, split and toasted
- 4 tablespoons yellow or spicy brown mustard
- 6 oz thinly sliced deli ham (about 12 slices) such as Black Forest or Virginia ham
- 2 oz thinly sliced aged cheddar or Swiss cheese
Prep time: 5 minutes Cook time: 2 minutes
DIRECTIONS:
Spread mustard evenly (about 1 ½ teaspoons each) onto cut sides of each muffin half. Divide ham and cheese, ending with cheese, onto bottom halves of muffins and transfer to a sheet pan; broil 6 inches from heat, until cheese melts, for 1 to 2 minutes. Serve topped with remaining muffin halves mustard sides down. NOTE: If you want this open face you could reduce the ingredient list to 2 muffins and 2 tablespoons mustard. Additions: Sliced dill pickle under the cheese, honey mustard or stone-ground mustard instead of regular mustard.
